Chito-oligosaccharides (COS) are the main degradation products of chitosan/chitin by chemical hydrolysis or enzymatic degradation (involving deacetylation and depolymerization processes). Compared with chitosan and chitin, COS is characterized by low molecular weight, high degree of deacetylation, and high degree of polymerization. In addition, COS has better solubility and lower viscosity under physiological conditions due to its shorter chain length and free amino groups in the D-glucosamine unit. Studies have shown that these properties of COS have important applications in biomedicine, pharmaceuticals and Agriculture.
